There's something about the flavours of the Middle East. They're rich, earthy and, well really 'moorish' ... I use a leg of lamb for this recipe that I de-bone and then butterfly. I cut away the thick layer of fat yet love that it still has some running through the meat. This gives it more taste.

You can use any cut of lamb you like, it 's really up to you and you can cook it butterflied and then slice it or chop it up, thread it onto skewers and grill them.

Either way it tastes great!
